Chickpea Noodles

I’ve been trying to watch my blood sugar, so non-grain noodle alternatives have been a lifesaver. And in fact, chickpeas and other legumes can actually LOWER your blood sugar! Every body is different, but I’ve been eating this stuff a ton and losing loads of weight. “Chickapea” is my favorite brand, but there are lots to choose from. The main thing I’d try to avoid is brands that add extra ingredients like starches. I try to stick with ones that are strictly made of chickpeas, lentils, cauliflower, and other beanie/veggie stuff. Some might consider the flavors of these noodles to be pretty different; as with basically any alternative, it’s by no means an identical substitute. But I think it’s all great in its own way. And if it lets me keep eating mac and cheese, I’ll take it!
